Monocalcium phosphate is a chemical compound with the formula Ca(H2PO4)2. It is commonly found as the monohydrate, Ca(H2PO4)2·H2O. Monocalcium phosphate is a particular chemical compound often used as a food additive in numerous processed foods. It is one of two primary ingredients in baking powder, along with baking soda (or sodium bicarbonate). It functions primarily as a leavening agent, as its combination with an alkali or base substance will cause the acidic monocalcium phosphate to react and produce carbon dioxide, which will in turn rise the product. It has the added advantage of not changing the pH of the product if included in identical amounts as the reacting alkali. Monocalcium phosphate does not appear to have any forms of health concerns related to it as it is used in common baking powder.
